Tuna Poke Bowls

All about that sauce you crave

tuna poke bowl recipe

makes 2 servings

 

ingredients

Poke

1 large orange, or ¼ cup oj¹

3 tbsp  black bean soy sauce

1 tbsp mirin

1 tbsp sesame oil

1 tsp rice vinegar

2 tbsp honey

1 tsp fresh grated ginger

½ tsp garlic powder

½ tsp kosher salt

½ green onion, thinly sliced

(Optional) 1 tbsp Macadamia nuts, chopped

½ pound sushi-grade tuna, diced

Toppings

1 to 1½ avocados, chopped

¼ English cucumber, sliced into half-moons

½ cup mango or pineapple, diced

½ green onion, thinly sliced

2 tbsp sliced nori

1 tsp toasted sesame seeds²

(Optional) Sushi rice

2 rice-cooker cup of uncooked Japanese rice

1 tbsp white sugar

3 tbsp rice or sushi vinegar

½ tsp salt

directions

In a bowl, juice three-quarters of the orange and strain out the pulp. Save a quarter of the orange to slice up and eat with your poke bowls.

Combine the soy sauce, mirin, sesame oil, rice vinegar, honey, fresh grated ginger, garlic powder, and kosher salt with the orange juice.

Add in the chopped tuna, green onion, and (optional) macadamia nuts and gently toss. Taste and adjust the seasoning to your liking, before letting sit for 15 mins up or up to 1 hour in the refrigerator.

(Optional) While the fish is marinating, make the sushi rice. Mix vinegar, sugar, and salt together in large bowl. Add hot steamed rice and mix well.³

Serve fish over rice and add at least half of an avocado, cucumber, mango or pineapple, green onion, and top with nori. Finish with lightly salting the avocado and a sprinkle of toasted sesame seeds.

 

Notes

1. Using fresh squeezed orange juice will impart a delicious freshness and natural sweetness to the sauce.

2. I toast black and white sesame seeds on a hot pan for about 30 seconds to a minute. After heating up a small pan on medium heat, pour in the sesame seeds and continuously swirl the pan. If you start to see any browning, remove the pan from the stove so the seeds do not burn.

3. Regular steamed rice works for this recipe, but I personally prefer the hint of light, tangy sweetness in the sushi rice.
